The CreativityWhether it is a sit down dinner for a wedding, private affair or a corporate event of any sorts, Chef Remi and his team will strive to achieve perfection in every aspect of the production, food, and service. Being a trained French chef, the level of creativity on the food has no limit. It is only obtained when the customer is satisfied with the menu created. Sample of menus: -Asian spiced salmon steak in a fillo crust filled with artichoke shrimp and herb fricassee -Grouper fillet topped with a macadamia/cilantro and ginger crust pan seared with light sesame oil served with jasmine rice, basil coulis finished with sweet sambal. -Caribbean seasoned black eyed pea/avocado guacamole topped with a jicama slaw served over a Julienne of crispy romaine lettuce and tortilla chips. -Tenderloin with grilled Portobello mushroom and sauté fresh foie gras on a bed of wilted arugula and port syrup and a Robert sauce with boniato chips or malanga. -Rack of Lamb marinated in a honey/coffee, spice, and roasted with grey salt. For the buffet, Chef Remi has a style like no other, and we are not afraid to step out of the box. We use props to keep the food hot such as flat stone, paella pans of any size, steamers, wok, cooking live on the buffet where the guests can enjoy the action, and appreciate the food prepared right before their own eyes. Whether it's Asian, French, or other international flair, Chef Remi and his team will prepare them from scratch with a taste that will bring you the country where the food originated. A simple dim sum or Italian pasta or a fresh seared foie gras will be true to the recipe and taste. |

Event PlanningChef Remi Catering and Event Design will take away all headaches involved in planning your event. The company will take care of the venue, photography, music, service, rental, food, wedding cakes and every other need you may have. Remember when you plan an event you are still in charge of the direction it takes. We will guide you, listen to all your concerns, and have a tasting planned to finalized the menu. We’ll make the changes that you deem necessary as long as it takes until we get to the perfect combination. We also work with several local party planners. They hire Chef Remi Catering to handle the food and the service. Usually they are in charge of the rest of the event. The South Florida reputation of Chef Remi is well established for his work ethics, quality of food, and general happiness about life and his trade. |
